Subscribe to Food Network: https://foodtv.com/2WXIIWZ Get the recipe: https://www.foodnetwork.com/recipes/sausage-gravy-2145820 Sausage Gravy RECIPE COURTESY OF REE DRUMMOND Level: Easy Total: 25 min Active: 25 min Yield: 12 servings Ingredients 1 pound breakfast sausage, hot or mild 1/3 cup all-purpose flour 3 to 4 cups whole milk, more to taste 1/2 teaspoon seasoned salt 2 teaspoons freshly ground black pepper, more to taste Biscuits, warmed, for serving Directions With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly. Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning. Spoon the sausage gravy over warm biscuits and serve immediately! Cook’s Note This recipe can be easily doubled to serve 24. Subscribe to Food Network: https://foodtv.com/2WXIIWZ Get the recipe: https://www.foodnetwork.com/recipes/alton-brown/stuffed-pork-chop-8132792 Stuffed Pork Chop RECIPE COURTESY OF ALTON BROWN Total: 1 hr Active: 35 min Yield: 4 servings Ingredients 1 cup plus 2 teaspoons kosher salt 1 cup dark brown sugar 1 tablespoon whole black peppercorns 1 tablespoon ground mustard 2 cups apple cider vinegar 1 pound ice cubes 4 double-thick, bone-in loin pork chops (1- to 1 1/2-inches thick; about 12 ounces each) 1 1/2 cups cornbread crumbs 1/4 cup walnuts 1/4 cup dried cherries 2 tablespoons golden raisins 1 1/2 teaspoons freshly ground black pepper 2 teaspoons fresh sage 1/4 cup low-fat buttermilk Vegetable oil Directions Place 1 cup of the salt, the brown sugar, peppercorns, mustard and vinegar in a 6-quart container and stir until the salt and sugar dissolve. Let the mixture sit for 5 to 10 minutes. Add the ice cubes and stir to melt most of the ice. Add the chops and make sure they are submerged in the brine. Cover and refrigerate 25 minutes. Preheat the oven to 500 degrees F with the oven rack in the center of the oven. Remove the chops from the brine, rinse and pat dry. Holding a knife parallel to the cutting board, cut a deep 2-inch-wide pocket into the side of each pork chop. Combine the cornbread, walnuts, dried cherries, raisins, pepper, sage, 2 teaspoons salt and the buttermilk in a mixing bowl. Place about 1/4 cup of the stuffing into the pocket of each chop. Brush both sides of each chop with the oil. Heat a cast-iron skillet until smoking hot, about 600 degrees F. Add the chops to the pan and cook until well seared, about 5 minutes per side. Transfer the pan to the oven and cook about 12 minutes more or until the internal temperature of the chops reaches 140 degrees F for medium. Be sure to temp the chops in the thickest part of the meat close to the bone, not in the stuffing. Let the chops rest 5 minutes before serving. Subscribe to Food Network: https://foodtv.com/2WXIIWZ Get the recipe: https://www.foodnetwork.com/recipes/anne-burrell/pork-tenderloin-with-roasted-grapes-and-mashed-sweet-potatoes-8132791 Pork Tenderloin with Roasted Grapes and Mashed Sweet Potatoes RECIPE COURTESY OF ANNE BURRELL Level: Easy Total: 1 hr 15 min Active: 50 min Yield: 4 servings Ingredients Pork Tenderloin with Roasted Grapes: 4 strips bacon, cut into lardons 3 tablespoons fennel seeds 2 small pork filet mignon, about 10 ounces each Kosher salt and freshly ground pepper 1 tablespoon extra-virgin olive oil 1 shallot, minced 1/2 cup port wine 2 cups seedless red grapes 1 1/2 cups chicken stock 3 tablespoons chopped fresh chives, for garnish Mashed Sweet Potatoes: 4 sweet potatoes, peeled and cut into large dice 2 tablespoons heavy cream, warmed 4 tablespoons unsalted butter, cubed Pinch of cayenne pepper Pinch of ground cumin 1 tablespoon light-brown sugar Kosher salt Directions For the Pork Tenderloin with Roasted Grapes: Preheat the oven to 375 degrees F. Cook the bacon lardon in a large skillet over medium heat until crisp, 5 to 6 minutes. Use a slotted spoon to remove the bacon and drain on a towel-lined plate. Reserve the bacon for the potatoes. Reserve the skillet with bacon fat to cook the pork. Toast the fennel seeds in a small skillet over medium heat until fragrant, about 2 to 3 minutes. Transfer to a spice grinder and grind into a fine powder. Season the pork generously with salt and pepper. Return the large skillet with bacon fat to medium-high heat. Place the pork in the pan and cook on all sides until rich golden brown, about 8 minutes. Remove the pork from the pan, dust the pork with the toasted ground fennel seeds, and place on a sheet pan fitted with a rack. Roast in the oven until the internal temperature reaches 150 degrees F, about 14 minutes. Allow to rest 10 minutes until ready to serve. Drain the fat from the skillet and place over medium-low heat. Add the extra-virgin olive oil and shallots and cook until softened, about 2 minutes. Season with salt then pour in the port and scrape with a wooden spoon to release the bits from the bottom of the pan. Add the grapes and cook the grapes until they split and let out their juices, about 10 minutes. Add half of the chicken stock, let it reduce slightly, then add the remaining stock and let cook until sauce is reduced by half and thickened, 8 to 10 minutes. Taste and re-season if needed. For the Mashed Sweet Potatoes: Add the sweet potatoes to a large pot and cover with cool water. Bring to a boil and cook until tender, about 15 minutes. Drain and return the cooked potatoes to the pot. Add the heavy cream and butter and combine with a hand mixer until smooth. Mash with a potato masher. Add the brown sugar, heavy cream and cumin and mix with a spatula to combine. Season to taste with salt. Add the cayenne, cumin, light brown sugar, reserved bacon and some salt and fold to combine. Slice the pork on a bias. Serve with the sweet potatoes and top with the grapes, sauce and chives. Read more: https://www.allrecipes.com/article/how-to-make-chocolate-truffles/ and get the recipe: https://www.allrecipes.com/recipe/278620/chocolate-truffles-4-ways/ Ingredients: 2/3 cup heavy cream 1 (4 ounce) bar semisweet chocolate, finely chopped 1 (4 ounce) bar bittersweet chocolate, finely chopped 1 tablespoon unsalted butter, softened 1/2 teaspoon vanilla extract 1/8 teaspoon fine sea salt Coatings: 1 (0.81 ounce) package freeze-dried strawberries 10 starlight hard peppermint candies 1/4 cup unsweetened cocoa powder 1/4 cup powdered peanut butter (such as PB2®) Directions: 1. Heat cream in a small saucepan over medium until steaming, about 5 minutes. 2. Meanwhile, combine semisweet and bittersweet chocolate with butter in a medium bowl. Pour hot cream over chocolate and let stand for 1 minute. Stir until melted and smooth. Stir in vanilla and salt. Pour into a shallow dish, such as a pie plate, cover, and refrigerate until ganache is scoopable, about 30 minutes. 3. Place strawberries in a mini food processor and pulse until finely chopped but not powdered, about eight 1-second pulses. Place in a small bowl. 4. Place mints in a zip-top bag and whack with a mallet about 5 times until coarsely crushed. Transfer to a separate small bowl. Place cocoa powder and powdered peanut butter in small bowls. 5. Scoop tablespoonfuls of ganache and roll into balls; your hands will warm up the ganache if it got too firm. Place on a parchment-lined plate. 6. Roll 3 truffles in each coating, pressing to adhere. Get the recipe: https://www.allrecipes.com/recipe/186378/sweet-potato-carrot-apple-and-red-lentil-soup/ Ingredients: 1/4 cup butter 2 large sweet potatoes, peeled and chopped 3 large carrots, peeled and chopped 1 apple, peeled, cored and chopped 1 onion, chopped 1/2 cup red lentils 1/2 teaspoon minced fresh ginger 1/2 teaspoon ground black pepper 1 teaspoon salt 1/2 teaspoon ground cumin 1/2 teaspoon chili powder 1/2 teaspoon paprika 4 cups vegetable broth plain yogurt Directions: 1. Melt the butter in a large, heavy bottomed pot over medium-high heat. Place the chopped sweet potatoes, carrots, apple, and onion in the pot. Stir and cook the apples and vegetables until the onions are translucent, about 10 minutes. 2. Stir the lentils, ginger, ground black pepper, salt, cumin, chili powder, paprika, and vegetable broth into the pot with the apple and vegetable mixture. Bring the soup to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the lentils and vegetables are soft, about 30 minutes. 3. Working in batches, pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot. 4. Return the pureed soup to the cooking pot. Bring back to a simmer over medium-high heat, about 10 minutes. Add water as needed to thin the soup to your preferred consistency. There are tons of shortcuts for chicken noodle soup, but this time we're not cutting corners—this is the long game! This version is about as classic (and as comforting) as they come, using a whole chicken—bones, skin, and all—to lend flavor and body to the broth. The key is to treat the breasts and legs differently: The breasts need to be pulled early so they don't overcook and dry out, whereas the legs require a long simmer to become incredibly tender. We used ditalini here, but feel free to use any small quick-cooking pasta you have! We wouldn’t be mad about orzo or ABCs either.
