Bring to a low simmer, then reduce the heat to very low. Let cook, stirring often, until thickened, about 20 minutes. Cheesy Baked Eggs RECIPE COURTESY OF KARDEA BROWN Level: Easy Total: 1 hr 30 min (includes cooling time) Active: 30 min Yield: 8 to 10 servings Ingredients 4 tablespoons unsalted butter, at room temperature 3 cups chopped mustard greens 1 clove garlic, minced Kosher salt and freshly ground black pepper 12 large eggs, lightly beaten 1/2 cup milk 1/2 cup baking mix, preferably Bisquick 2 cups grated sharp yellow Cheddar 2 cups grated Monterey Jack cheese 2 cups frozen hash browns Directions Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon softened butter. Melt the remaining 3 tablespoons butter in a skillet over medium heat. Add the mustard greens, garlic and a pinch of salt and pepper and saute just until wilted, 2 to 3 minutes. Remove from the heat and cool slightly. Whisk together the eggs, milk, baking mix, 1/2 teaspoon salt and some pepper in a bowl until well incorporated. Stir in the mustard greens, cheeses and hash browns. Pour into the greased baking dish. Bake until puffed lightly, golden brown and soft-set in the middle, 45 to 50 minutes. Cool slightly before slicing and serving warm. Crunchy Quinoa-Crusted Chicken Tenders RECIPE COURTESY OF CATHERINE MCCORD Level: Easy Total: 1 hr 40 min Active: 1 hr Yield: 4 servings Ingredients 1 1/2 cups cooked quinoa 1/2 cup breadcrumbs 1 teaspoon kosher salt 1/2 teaspoon garlic powder 1/4 teaspoon paprika 2 large eggs 2 pounds chicken tenders or chicken breasts cut into strips Olive oil, for cooking Lemon Yogurt Dipping Sauce, recipe follows Roasted Cauliflower, recipe follows Lemon Yogurt Dipping Sauce: 1 cup plain Greek yogurt Juice of 1 lemon 1 tablespoon chopped fresh parsley 1 tablespoon Dijon mustard 1/4 teaspoon garlic powder 1/4 teaspoon kosher salt Roasted Cauliflower: 4 cups cauliflower cut into florets (yellow, purple, white and green) 2 tablespoon olive oil Kosher salt Directions Pour the quinoa onto a towel and blot to remove any excess moisture. Combine quinoa, breadcrumbs, salt, garlic powder and paprika in a shallow bowl. Whisk the eggs together in another shallow bowl. Dip the chicken into the egg, and then into the quinoa mixture, pressing evenly to coat. Add a thin coat of olive oil to large skillet over medium-high heat. Add chicken in batches and cook until quinoa is golden and chicken is cooked through, 4 to 5 minutes on each side. Serve with lemon yogurt dipping sauce and roasted cauliflower on the side. Lemon Yogurt Dipping Sauce: Combine the yogurt, lemon juice, parsley, mustard, garlic powder and salt in a bowl and mix well. Roasted Cauliflower: Preheat the oven to 425 degrees F. Place cauliflower on a baking sheet, drizzle with olive oil and toss to coat. Sprinkle with salt. Bake until golden, 35 to 40 minutes. Chicken Tikka Masala RECIPE COURTESY OF AARTI SEQUEIRA Level: Easy Total: 1 hr 25 min Prep: 20 min Inactive: 30 min Cook: 35 min Yield: 4 to 6 servings Ingredients Marinade: 1 cup plain yogurt, whisked until smooth 3 tablespoons Ginger-Garlic Paste, recipe follows (or 1 tablespoon grated fresh ginger and 3 cloves garlic put through a garlic press or finely minced) 1 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper 1 pound boneless, skinless chicken thighs, poked with a fork, and cut into large bite-sized chunks Sauce: 2 teaspoons olive oil 3 tablespoons butter 1/3 cup Ginger-Garlic Paste, recipe follows (or 6 cloves garlic and 2-inch thumb ginger minced) 2 serrano peppers, minced (seeds removed if you don't want it spicy) 2 tablespoons tomato paste 1 teaspoon garam masala 2 teaspoons paprika 8 Roma tomatoes, diced 1 1/2 teaspoons kosher salt 1 to 2 cups water Oil, for grilling 1 tablespoon dried fenugreek leaves (optional) 1/2 cup heavy cream Minced fresh cilantro, for garnish Cooked rice, naan, or crusty piece of bread, for serving Ginger-Garlic Paste: 1/2 cup cloves garlic, whole 1/2 cup fresh ginger, peeled, cut into 1/2-inch slices 1/4 cup canola oil Directions For the marinade: In a large bowl, mix together the marinade ingredients. Add the chicken and toss to coat. Marinate at least 30 minutes, or in the refrigerator up to overnight. For the sauce: When you're ready to make the curry, place a large skillet over medium heat and add the olive oil and butter. When the butter has melted, add the Ginger-Garlic Paste and serrano peppers. Saute until lightly browned around the edges. Add the tomato paste and cook until the tomato has darkened in color, about 3 minutes. Add the garam masala and the paprika and saute for about 1 minute to draw out their flavors. Add the tomatoes, salt, and 1 cup water. Bring to a boil, turn down to a simmer, and cook until thickened, about 20 minutes. You may need more water depending on how much liquid the tomatoes give off. Meanwhile, fire up your grill. When it is nice and hot, lightly brush it with oil. Place the chicken on the grill, shaking off some of the excess marinade. Cook until it's charred, about 2 minutes on each side. (Don't worry that the chicken will still be a little uncooked, it finishes cooking in the sauce). Pour the sauce into a blender or food processor, or use an immersion blender, and process until smooth. Pour back into the skillet and bring back up to a boil. Add the chicken and fenugreek leaves, if using. Take the heat down to a simmer and cook for about 10 minutes. Add the cream and stir through. Garnish with minced fresh cilantro, and serve over rice, with naan, or a crusty piece of bread! Ginger-Garlic Paste: Throw the garlic, ginger, and canola oil in a mini-food processor and let it go until it forms a semi-smooth paste. There will still be tiny little pieces in there, but overall, it should resemble a paste. Save what you don't use in a small glass jar. It should last in the fridge for 2 to 3 weeks. It's a delicious addition to marinades, pasta sauces, stir fry sauces, slow-cooker recipes, gravy etc. We always had a jar of this stuff in our fridge growing up. An adult oyster can filter up to fifty gallons of water a day, and oyster reefs foster biodiversity and help protect shorelines. The Billion Oyster Project is on a mission to repopulate NY’s Harbor with 1 billion oysters by 2035, the same number that have disappeared from its waters over the past 100 years. BOP collects used oyster shells from restaurants and repurposes them for oyster larvae to attach onto, then drops oyster cages into NYC’s waters to grow. Through various educational programs, the organization fosters local climate activism and helps empower young New Yorkers by teaching them about the city’s often overlooked natural resources. Step 3 Preheat oven to 300 degrees F (150 degrees C). Place the crisp taco shells on a baking sheet, and warm them in the preheated oven for 3 to 5 minutes. Step 4 To make the guacamole, peel, seed, and mash the avocados in a bowl with 1 tablespoon of sour cream, the lime juice, and salt and pepper to taste, and set aside. Step 5 To build the tacos, spread each flour tortilla with about 2 tablespoons of heated refried beans. Wrap the tortilla gently around a crisp tortilla shell. Spread about 2 tablespoons of ground beef along the bottom of the crisp shell, and sprinkle about 2 tablespoons of shredded Cheddar cheese on top of the meat. Top the cheese with shredded lettuce, a sprinkle of chopped tomato and onion, and a dollop of sour cream and guacamole.     Join Amiel Stanek in his home kitchen as he makes doughnut bread pudding. This recipe is a great way to use up stale doughnuts, but if you’ve got freshly made ones, that works too. Start with classic glazed or sugar-coated yeasted doughnuts, which have a light and airy texture, rather than cake doughnuts, which are dense and will turn to mush when combined with the custard. The bread pudding will puff heroically near the end of its baking time, like a soufflé, but fall shortly after it comes out of the oven; don’t worry, it’s supposed to do that! The final texture is somewhere between an eggy bread pudding and a clafoutis, and it’s pretty hard to stop eating.     Jelly doughnut biscuits are what you get when you try to make a less-sweet, less-rich baked version of jelly doughnuts, and then roll them too thin. Since this didn't come out as successfully as I'd hoped, so there's no Allrecipes.com recipe page link, but just in case you want to play around with this, here’s what I used and did. Enjoy! For the sponge: 3 tablespoons white granulated sugar 1/2 cup all-purpose flour 1 packet dry active yeast (2 1/4 teaspoon) 2/3 cup warm milk For the rest of the dough: 1 large beaten egg 3 tablespoons melted unsalted butter 1/2 tsp vanilla extract 1/4 teaspoon salt 2 cups all-purpose flour, plus more as needed - Make sponge, and wait 30 minutes - Make and knead dough - Let rise 1 hour or until doubled - Roll and cut - Let proof 45 minutes or until doubled - Bake at 375 F. for 12-14 minutes - Fill with jam, coat with sugar, and eat
