Subscribe to Food Network: https://foodtv.com/2WXIIWZ Get the recipe: https://www.foodnetwork.com/recipes/alexandra-guarnaschelli/blackened-salmon-recipe-1918253 Blackened Salmon RECIPE COURTESY OF ALEX GUARNASCHELLI Level: Easy Total: 12 min Cook: 12 min Yield: 4 servings Ingredients 1 tablespoon paprika 1 tablespoon cayenne 10 sprigs fresh thyme, washed, leaves removed and chopped 1 tablespoon freshly chopped oregano leaves 1 teaspoon kosher salt 4 (6 to 7-ounce) pieces salmon, pin bones removed, skin-on 3 to 4 tablespoons canola oil 2 lemons, zested and juiced Directions In a small bowl, add the paprika, cayenne, thyme and oregano and salt and mix to blend. Put the mixture on a plate or other flat surface and coat the portions of salmon, 1 at a time, on the flesh side only. Heat a large heavy-bottomed pan or cast iron skillet over medium heat, and add the oil. When the oil begins to smoke quite heavily shut the heat off under the pan. Add the salmon, 1 at a time, in a single layer, flesh side down, in the oil. Turn the heat back on under the pan and cook for 2 to 3 minutes. Use a spatula to turn the salmon to the other side. Cook the salmon over medium heat, until the skin becomes crispy, about 5 to 6 minutes. Arrange the salmon on a platter, sprinkle with lemon zest and lemon juice and serve immediately. To make the granola, toss the hazelnuts, cashews, oatmeal, almonds, coconut, oil, and honey together in a large bowl until they are completely combined. Pour onto a sheet pan and bake, stirring occasionally with a metal spatula, until the mixture turns an even golden brown, about 20 minutes. Remove the granola from the oven, scrape the pan with the spatula to loosen the granola, and allow to cool, stirring once.     Insider's Claudia Romeo traveled to Seine-et-Marne, France to visit Ferme des 30 Arpents. The farm is one of seven farms making raw-milk Brie de Meaux cheese, and the only one that makes it fermier, which means that the cheese is made by hand solely with milk produced by the 250 cows at the farm. Every day, Ferme des 30 Arpents will make about 300 wheels of Brie de Meaux from its herd's milk. Editor's note: This footage was filmed on February 14, 2020.     Billy Goat Tavern, established in 1934, is a burger institution in Chicago, known for its double cheeseburger made with thin, all-natural beef patties served on a kaiser-roll bun. The original restaurant — which was a tavern across from the Chicago Stadium — was born when a goat fell off a passing truck and wandered into Greek immigrant William Sianis' tavern. Sianis adopted the goat, grew a goatee, and was nicknamed Billy Goat. This quirky tavern, known for its Cheezborger, is no stranger to famous faces. Get the recipe: https://www.allrecipes.com/recipe/228546/my-best-chicken-piccata/ Ingredients: 1 cup all-purpose flour 1 teaspoon salt ½ teaspoon ground black pepper 4 skinless, boneless chicken breast halves - trimmed and cut in half crosswise ½ cup butter ¾ cup dry white wine 1 lemon, juiced 1 teaspoon capers 1 lemon, sliced 2 teaspoons chopped fresh parsley Directions: Step 1 Mix flour, salt, and black pepper in a bowl. Dredge the chicken breast pieces in the seasoned flour to coat; tap off excess flour. Step 2 Melt butter in a skillet over medium heat until hot but not starting to brown. Pan-fry coated chicken breast pieces in the hot butter until golden brown, the juices run clear, and the chicken is no longer pink inside, about 10 minutes. Turn the chicken pieces often. Remove chicken from skillet and keep warm. Step 3 Pour white wine into the skillet and scrape pan to dissolve any browned bits of food on the bottom. Mix in lemon juice, reduce heat to low, and simmer until sauce is slightly thickened, about 10 minutes. Stir often. Stir capers into sauce and place chicken back into skillet, turning to coat with sauce.
