Cheesy Bacon and Hash Brown Frittata RECIPE COURTESY OF GIADA DE LAURENTIIS Level: Easy Total: 50 min (includes cooling time) Active: 40 min Yield: 4 to 6 servings Ingredients 8 ounces bacon, diced 1/2 red onion, diced 2 cups frozen hash browns, thawed 1 3/4 teaspoons kosher salt 1 bunch Tuscan kale, chopped 10 large eggs, at room temperature 1/2 cup heavy cream or whole milk, at room temperature 4 ounces sharp white Cheddar, grated (about 1 1/2 cups loosely packed) 4 ounces mozzarella, grated (about 1 cup) Directions Preheat the broiler to high and position a rack in the top third of the oven. Put the bacon in a 12-inch nonstick ovenproof skillet and place over medium heat. Cook, stirring often with a rubber spatula, until the bacon is crispy and golden brown, about 10 minutes. Remove the bacon to a plate with a slotted spoon and remove all but 2 tablespoons of the bacon fat from the skillet. Add the red onion to the skillet along with the hash browns. Stir in 1/2 teaspoon salt and spread the mixture evenly over the bottom of the skillet. Cook, undisturbed, until the potatoes are beginning to brown and get crispy, about 3 minutes. Stir the potato mixture with a rubber spatula. Re-spread the mixture evenly on the bottom of the skillet and cook, undisturbed, to brown a bit more, another 2 minutes. Add the kale and another 1/2 teaspoon salt and cook until the kale is wilted, another 2 minutes. Stir in the reserved bacon. Meanwhile, whisk together the eggs, heavy cream and remaining 3/4 teaspoon salt in a medium bowl. Add the grated cheeses. Add the egg mixture to the skillet and stir to combine. Cook, stirring occasionally with a rubber spatula, until the mixture looks like loose scrambled eggs, about 2 minutes. Cook, undisturbed, to set the bottom, about 1 minute longer. Place the skillet under the broiler until the top is golden brown and the eggs are set, 3 to 4 minutes. Allow to cool for 5 minutes before slicing into wedges and serving. Your Own Blended Pork Sausage and Fried Eggs RECIPE COURTESY OF ALEX GUARNASCHELLI Level: Easy Total: 25 min Prep: 5 min Cook: 20 min Yield: 4 to 6 servings Ingredients 1 pound ground pork (lean but not too lean) Kosher salt 1 teaspoon chile flakes 1 teaspoon fennel seeds, toasted 1/2 teaspoon cayenne pepper 1/2 cup breadcrumbs, toasted 1/2 cup finely grated Parmesan 1 tablespoon canola oil 2 to 4 tablespoons unsalted butter 4 to 6 eggs Directions Put the meat in a large bowl and mix together with your hands. Add a good pinch of kosher salt, the chile flakes, fennel seeds, cayenne, breadcrumbs, and Parmesan. Mix to blend and then form the meat into small 2-inch patties. Heat the canola oil in a large skillet over high heat. When the oil begins to smoke lightly, shut off the heat to avoid splattering, and add the meat patties in a single layer in the pan. Take care they are spread somewhat apart so they have a chance to brown instead of steam. Put the heat back on high and brown them, turning them so they brown all around, 3 to 5 minutes on each side. Touch them to make sure they are still tender and somewhat yielding in the center. Use a slotted spoon or spatula to remove them from the pan. Transfer the patties to a platter or individual plates. Use a kitchen towel to wipe clean the skillet, put the heat on medium, and add the butter. When it begins to brown, crack 2 eggs, a distance apart, into the butter. Lower the heat, season the eggs lightly with salt, and cook 2 to 3 minutes or longer, if desired. Repeat with additional eggs. Put the eggs on the patties and serve immediately. Sour Cream Cupcakes RECIPE COURTESY OF ANNE BURRELL Level: Easy Total: 1 hr 35 min Prep: 45 min Inactive: 30 min Cook: 20 min Yield: 12 cupcakes Ingredients Cupcakes: 2 cups all-purpose flour Candy or sprinkles, for garnish 2 teaspoons baking powder Pinch salt 1 1/2 sticks unsalted butter at room temperature 1 1/2 cups sugar 3 eggs 1 1/2 teaspoons vanilla extract 1/2 cup milk 3/4 cup sour cream Frosting: 1 (12-ounce) bag semisweet chocolate chips 3 sticks unsalted butter, almost room temperature 1 teaspoon vanilla extract Pinch kosher salt 1/2 cup powdered sugar Directions Special equipment: 12-cup muffin tin, cupcake liners Preheat the oven to 350 degrees F. Combine the flour, baking powder and salt in a large bowl. Reserve. In the bowl of a stand mixer combine the butter and sugar. Using the paddle attachment beat the butter and sugar together until they are light and fluffy. Turn the mixer off and scrape down the sides of the bowl. Beat in the eggs, 1 at a time. Slowly add the vanilla, milk and sour cream. Scrape down the sides of the bowl, as needed. With the mixer on medium speed, gradually mix in the flour. Line a muffin tin with paper muffin cups. Fill the muffin cups about 2/3 of the way, dividing the batter evenly among the lined cups. Put in the preheated oven and bake for about 20 minutes. Check about halfway through the baking process to make sure everything is going along great and also rotate the muffin tin. The cupcakes are done when a toothpick comes out clean when inserted into the middle of a cake. Remove from the oven and let cool completely on a wire rack, then frost and decorate. Frosting: Put the chocolate chips in a heat-proof bowl. Put 1-inch of water in a saucepan and put the bowl of chips on top of the pan. Bring the water to a boil over medium heat. Gently stir the chips around until they are 3/4 of the way melted. Remove the bowl from the saucepan and stir occasionally until all the chips have melted. In the bowl of a stand mixer with the paddle attachment, beat the butter until light and fluffy. Scrape down the sides and add the powdered sugar, vanilla and salt. Beat on low speed until the mixture is combined. Then turn the mixer speed to medium-high and beat for 30 seconds. Turn down the mixer and add the chocolate gradually. Turn up the mixer again and beat until the chocolate is completely incorporated and the frosting is light and fluffy.     The Monta Factory in Los Angeles is owned by the Egiazaryan family (Grant, Evelina, Francine, and Sarkes). They have been prepping handmade monta for over a decade. Monta, or monti, can be found on the menu at various Middle Eastern restaurants, and this is how the family makes it based on their Armenian roots and recipes. The dish consists of marinated ground beef stuffed inside a boat-shaped dough shell. The tiny monti pieces are then oven-baked until the edges are crisp and served with tomato sauce, garlic cream, or both. Customers can also order soup monta, which consists of closed monta pieces inside a tomato herb or garlic cream soup. The family started the business when they immigrated to the US from Armenia in the early '90s, opening up a small shop in downtown LA. The shop closed a few months later, only for the dream to be picked back up 16 years later with a hole-in-the-wall wholesale shop in Pasadena, and later a larger dine-in restaurant in Glendale. The family hopes to pass the monta-making tradition down to the younger generation and preserve the dish and family memories. Preheat oven to 350 degrees F (175 degrees C). Grease an 9x5 inch loaf pan. 2. In a large bowl, stir together the mashed banana, eggs, oil, pumpkin, honey and sugar. Combine the flour, baking powder, baking soda, salt, pie spice and cinnamon, stir into the banana mixture until just combined. Fold in the raisins and walnuts if desired. Pour batter into the prepared pan. 3. Bake at 350 degrees F (175 degrees C) for 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before moving to a wire rack to cool completely.
